I am truly surprised the corporate policy had not caused more of this. As word spreads among the transients it will have to be an issue in some locations.

Unless that is the policy Starbucks is fine here.

Male coffee makers are called baristas? I figured they would be called something more masculine.

Why isn't Starbucks protecting their employees properly?

I don’t see any grounds for a lawsuit here.

If I ever get arrested, I pray one of the charges is "suspicion of mayhem".

I have actually had one come and beg me for money IN the Starbucks.
It's one thing for them to be scoping the door outside and try to get you on the way to your car (which is annoying enough as it is), but for frick's sake!!!!
O really like how the bums go in there to sleep while they charge their phones!

In a perfect world with a perfect system there may not be. But Starbucks created and publicized a policy which allowed homeless people to come in the stores and required employees to give out hot water for free. They set this up to happen. In the legal environment in 2019 such a case would do well.
I doubt there is any specific policy about asking someone to not use the bathroom for more than 10 but it is a reasonable request so that other customers and employees may have use of the restroom.

If it is only "suspicion", you're not doing it right.
