Smoked Meat and Drink Thread

Likely a topic better suited for the Food/Drink board....but I often prefer the banter of OT folk.
Not much to do when waiting out a storm other than drink and smoke carcass on the green egg.
Smoking an entire side of Atlantic Salmon along with 2 venison straps.
As for beverages, going Holy Roller IPA then small batch bourbon.
What say y’all?
