When I was growing up, we'd only eat them on Saturdays because it would take me and the rest of the household two days to recover.

It was more than just soaking the beans while the laundry was being boiled on the woodstove. It was tending the woodstove all day long to do ALL the family laundry, which make continuous stirring of the red beans a lot easier to do.
About Moros y Cristos....great dish. The sofrito is almost the beginning of a roux and I use Benton Bacon for the meat, though I now have some tasso to check out with the dish that too often is abbreviated "moros"
