It creates a barrier between the meat and the bun to keep juice from getting the bottom soggy.

It's kind of a traditional thing for a lot of the guys that cover high school sports to post a pic from a place where they ate on Twitter. I love seeing them from barbecue places or home cooked places where I've eaten. Lots of times they'll thank another writer for recommending the place. That's how I found out about a few places.
