What's the target max deflection? How will it be supported?

Is this for home use or something used in industry? Osha requires a 5 to 1 safety factor if it's used in industrial applications

750lbs... Gonna assume that 30' span has no lateral support... Fairly conservatively a W8x24 W10x26 or W12x26. (According to AISC 9th edition and CMAA Specification No. 74)

I'd go with an s10x25.4
If his span is only supported at the ends at 30' I'd suggest capping it with a piece of c6x8.2 lip down and chain tack to help prevent the beam from twisting and bending.
Also, when you get a hoist trolley get one that locks especially if he's going to be using it to flip stuff.

You are looking for an I beam, not an H. (I am assuming you are going to be moving it on a beam trolley.)
Your hoist speed also plays a role. What make and model of hoist?
