One watch is too few. If I'm forced, it would probably be a Rolex Datejust, but I would be super unhappy about it. But it's the only watch I can think of that truly fits the "dress tool watch" box, in spite of what Submariner and Panerai owners will say to the contrary.
At minimum, a reasonable question is one dress watch and one casual watch. Ideally, you add a third tool watch, either a diver or a chrono.

I have the two outside models rotating on nato straps in summer and jubilee band in winter.
When I finally decide between the Seamaster or Sub I’ll upgrade but for now, these two are great.
