I asked the founder guys if there was a way to pay for my beer without donating money to bums and they didn't like that idea
Pretty sure most normal people already give enough money in taxes to lazy people and don't want to give money from what's left to homeless people

In Boston a lot of the bigger companies have partnerships with charities they donate a lot of money to. These charities generally deal with education, medical, and public use. It made sense as all companies were pitching in for something.
It would be nice to have in BR/NOLA, but we all know those funds would just be used for under the table pay outs and would not be used as intended. Pisses me off that it works this way.

The New Belgium "liquid center" here in Asheville gives all tips to the Rainbow Coalition. I like to drink there, so I just quit tipping.

How is it capitalist for the company to take half of the tips, which should go to the wait staff, to give to people who didn't earn them?
Why doesn't the company simply put out donation jars, or give X percentage of its revenue or profits to said charity?

For it to be a write off they would actually have to have the reported income therefore being a wash at best and probably a loss charitable donations are deducted at less than 100%

If they are paying people a decent wage... the need for tip income for the employees isn't as great.
Imagine that... tips actually NOT being used as salary... but to truly reward good service. Because the employees won't depend on tips to live... it's ok to give half the tip money to charity.
In other, more progressive places... this isn't that uncommon. You also have places where you eat lunch and you pay them what you think you can afford. Seems to work.
My guess is this won't be a cheap place to drink. I don't mind paying a little more if the beer is good and I don't have to deal with the trash.
