I can’t argue there. I tend to be pretty emotionally flat/even keeled, but I know I can’t always rein it in. I put off some serious conversations til the week after my period to be sure I won’t have a hormonal reaction & cry.

I don't understand them at all; I'm 58 and gave up trying to figure them out 35 yrs ago...which I would have done so sooner.

It's conditioning. Generally happens to people who feel very little control over their own outcomes.

But they gladly give up control for the most part.
My wife will sometimes complain we always do what I want to do, but when it comes down to a time where we're making a decision on eating, going out of town for a weekend, etc etc the decision is always defaulted to me.
That's been my experience in most adults relationships. The joke "'I don't care' and 'you pick' aren't real restaurants" is very real.

Never get a woman used to something that you don't want to keep on doing.
You got to be unpredictable. otherwise you create a debt/debtor relationship. if someone expects something, they aren't going to appreciate it when they get it. And if they don't get it, then you now owe them a debt.
Never mind that you didn't owe them anything to begin with.
This is why Valentine's Day and other corny holidays actually hurt the concept of romance in a relationship. There's no love involved. It's simply a debt/debtor exchange.
An easy way to find out if your woman has been poisoned by this "you owe me" mindset is to simply skip Valentine's Day. You don't have to be rude. Just text her Happy VDay and leave it at that. See what happens.

Depends on how you do it. If I got my wife flowers on VDay, she'd puke. She hates that shite. But I do always make steak and lobster. We enjoy it because we don't eat steak and lobster every day so it's a nice treat for both of us. Sure, the expectation is there, but I put it on myself too and I cook almost every other night anyways so nothing really changes but the menu.
The love is still there because the only real expectation she has is that we're going to share a nice meal and a nice bottle of wine together. That's all she really cares about. And that meal could be pasta and butter for all she cares.

well, she has complained that she isn't gonna know what to do with herself all summer.

We haven't celebrated the two valentines days that we have been together. She think's it's dumb. She does get really excited over what I'm getting her for her birthday but she also gets excited when she gets me something for mine.

Pretty much every time a girl compliments a new haircut, shirt, watch, etc. I'll do this in response

My wife's is in April, my in October. I threw something together for her the day before, she had my birthday trip planned last year and had the actual day of my birthday planned since April.
She definitely likes planning mine better than enjoying hers. Although last year I surprised her with a flight out to her favorite winery and got the whole place reserved for us. She started crying when I told her a week before.
