I violate this 50% of the tine I cook. 100% when I cook jambalaya or gumbo.

You can sterilize a turd if you heat it enough. I think you'll be ok with chili.

If it was covered from the time it was hot, the whole time, then the sterile environment was maintained. If you openned and closed it and ate from it after it cooled, you need to get it back up to 160 before eating more.

All good. Just reheat it on the stove, add a little water because it's probably a little dry, and good to go. Do it all the time.

Think of it this way if you left a cup of ice on the counter from the night before and it was room temperature water the next night would you fell unsafe to drink it? If you cooked it it was sterile. Then sat a little while. Reheat or don’t you won’t get sick.

Yes, it's fine. Everyone is so damn programmed about things going bad.

What about canned chili? It's been made months before it's eaten.
Bacteria cannot "grow" unless it is already in the food. The initial cooking kills the bacteria, and if a lid was on the pot you're good.
