Man frick that, I would sympathize with most after the guy was told to keep it down but she deserves to hear every bit of it

You're performance here has been typically pathetic.
That fact that the bar would have preferred that two customers not get into an argument there has no bearing on whether or not he was aggressive or foul mouthed...neither of which were suggested in the report. Despite that, he had every right to speak to Her Royal Highness, and be critical when doing so.
I realize people have lost their minds in the past 18 months, but we actually don't technically live in a dictatorship quite yet. Elected officials are our employees and they ultimately answer to us. And that means that occasionally they might have to hear an unhappy citizen. Blaming the guy for daring to speak critically to her is akin to victim blaming here.

Since it's fine to speculate here, what's more likely? That a guy was losing his shite for 10 minutes directly at LaToya and this person filming saw nothing interesting there and only started filming when she got there, or that what took place before did not rise to the level of even lifting a phone until LaToya flipped out and started hollering at him?

This is the hotel where the President of the United States and other high dignitaries stay when they stay overnight in NOLA....there are cameras all over the place recording footage.
Somewhere there is footage of the whole encounter and I'm betting the house that the Destoya camp is demanding they get rid of it or not release it because it will show she was the aggressor.....otherwise it would have already been released.

Wait, what??
The context of the video 100%, zero doubt, was that he had just referred to her in some way and it triggered her. There is no way anyone with a brain could think the video followed any prolonged encounter, especially one where he was harassing her.
We see her going at him full force, he could barely get a word in, and we’re supposed to believe he harassed her for some prolong period before then?
