It's bad enough I have to listen to my children eat like animals at night, I cant imagine having to put up with grown adults in the workplace.

This would do it for me. I am not sure how I would go about it, it would all depend on the relationship I have with that person. I am a direct person, but it depend on the type of relationship I have with them. I hate when I am "cool" with someone. In other words, someone you never had problems with, who seems like a good person... but when they do something that gets on your nervous you can't just yell at them, "dude, stop the fricking smacking".
If that is the case with this guy, I can see how it would be uncomfortable to tell him..I think, for me, if it got to the point where I couldn't take it I would finally have to tell him "dude, I am sorry, but when you eat at your desk I can hear you smacking and sucking bones like your life depended on it. Can you tone it down a little?".

If he stores his lunch in the office fridge you can discreetly throw it away sometime in the morning. I guess it won't always work since he will store it somewhere else but might give you a break.

I eat at my desk. So does the older man across the hall. I literally get up and close my door 30 seconds after he starts eating because I can hear the smacking over my music. Drives me insane. I don't know how people make it this far through life with no one telling them how fricking annoying it is.

Used to work with a guy who would chew up the bones of chicken legs and suck out the marrow - then spit the broken pieces of bone back onto his plate.

I'm not easily grossed out by other people's eating techniques nor am I particularly concerned with being polite. Because... you know... I'm not a bitch. This sounds like bitch problems to me. No offense...

My old boss ate some form of pickled fish every day. The break room smell was bad enough, but his afternoon shits would clear the back hallway. Funny thing is that he always liked to use the woman's designated restrooms. They are single holers, but it was quite upsetting to several of the ladies.
