There are definite benefits to going vegetarian, like a few have said, and it's not overly difficult. Vegan is tougher to do well and stay healthy. A lot of produce has morphed (GMO) to be less nutritious than it used to naturally be.
A good way to transition if interested is to do mostly vegetarian and try to make the meats you eat organ meats. Organ meats tend to be more nutritious (that's why old school body builders ate liver & liver pills as much as they did). And perhaps supplement with bone broth.
Regarding environmental impact of farming in general, and of livestock especially, I think big agricultural companies (Monsanto, ADM, etc.) have made things worse than they need to be. Don't know if they initially knew the problems they were causing; the control they have and $ they make are the obvious reasons they're reluctant to improve things.
But I think it can be done better. Joel Salatin is a rather interesting figure and pioneer in terms of farming livestock more naturally. Pioneer is probably a funny way to say it... it's undoubtedly riffing on old ways, at least in part. He has a way of rotating animals (I think chickens being rotated into areas where cows were to eat insects, or similar, is an example) that results in healthier animals without antibiotics, and the land is cleaner and not depleted the way it becomes in standard big farms.
Hard to do his ideas justice in a post without writing a novel. Here's a couple of fascinating (imho) podcasts with Joel Salatin for those interested:

I thought that myself. Then a loaded a soup filled with beans and vegetables, ate it for 5 days just to see how I felt, and holy shite, joints stopped hurting, acid reflux went away, and had a ton of energy. The soup I made ended up having roughly 30g of protein and 15g of fiber per serving and was delicious. I made it spicy with peppers, added some cold pressed olive oil, and was absolutely satisfied.
I do eat fish on occasion, but man, beans/vegetables/nuts added ten years to my life at least. I'm 31 and feel 18.
ETA: for my snacks I eat fruit and/or nuts. I have never been as satisfied. I am hooked.
Going vegan doesn't mean you can't ever eat meat. You just don't eat often. I did it strictly for the health benefits, and it's actually cheaper to feed yourself with. Also doesn't hurt I lost bad weight along the way.

God gave man dominion over the animals. If we want to eat them, then eat them. Human bodies were designed to consume vitamins and minerals from fruits, vegetables, and animals. Typically, vegans do not get enough iron in their diet. Red meat is high in iron. eat some red meat each week.
Taking vitamin/mineral supplements are necessary if you do not get enough of them in your daily diet. Your body absorbs vitamins/minerals form food sources much better than vitamin/mineral supplements. There are certain supplements that the body does not absorb much at all.
Cook your meals at home eat some salads, but eat red meat each week.
A lack of iron will cause a person to get tired often.

Not true. If you're just looking to say "hey I'm a vegan", sure, you can't eat meat. But if you adapt your lifestyle to eat mostly a vegan diet, frick what anyone says if you want a steak every once in a while.

Again, if you're just looking for a label, sure. But if you're looking for a healthier diet, eating mostly vegan will most definitely improve your health.

Labels (vegan, vegetarian, etc.) are just labels and don't matter, which I think is your point. But for people who are sticklers about such things, probably preferable for a person to say they eat "mostly" vegetarian (or vegan) but make periodic allowances, which they can explain/justify as they see fit.
