The all day beans that you manually smash for thickness are better, but in a pinch this thing will put out pretty good red beans.

You can do it in a solid hour including prep if you are cutting all your own vegetables. If you buy the pre-chopped onions, celery, bell peppers at the store, 45 min max. You can saute the veggies in the instantpot, then just add beans, sausage, water, bay leaf, tasso and hit the "beans" button. Cook rice on the side. Wait 45 minutes and bleed off the pressure. Done.

Just cooked my first meal in it. Shredded pork which I made tacos with. Also did a spaghetti squash. So far, very impressed!

I can't seem to get the timing or water content correct. Whatever I cook tends to taste steamed.

Dry beans

After 5 minutes at pressure they have absorbed more water than a night of soaking would do

That is awesome. I guess no more canned beans for me.

I have a stove-top pressure cooker but I really haven't used it as much as I should.

Main things I've cooked are baked potatoes and large cuts of meat, like beef or pork roasts.

I also made a gravy with some wild whole ducks and it was the most tender duck I've ever eaten

Hmmm. Crabby Jack's style. It sounds delicious.

F a 6 hour pot roast! I'm putting this on my Christmas list!!! I got a Crock Pot for Xmas since I asked for it, thinking I'd use it all the time, but I can't stand waiting for food to cook or leaving the house with any cooking appliance on. I just don't trust those things.

It's why I've never actually cooked a pot roast. And it's one of my favorite foods. Yet damn near nobody except shitty buffets have it.

I'll cook one soon. But tonight, I'm going to cook up a Guinness beef stew in it. That should make for a good test run.
