Ancient Chinese secret:
Fill the back-pack full of baking soda (a couple of large boxes will work), then take a five gallon bucket and slowly pour a gallon of cheap vinegar into it. (Kitchen floor works great). Slowly submerge backpack into solution and the cat pee boils out right in front of your eyes leaving a fresh clean usable backpack.
Tell wifey to make you a sammich.

Fill up your bath tub with hot water, get some laundry detergent or some of the home remedies people mentioned, and hand wash that thing like people did before they had washing machines.

nature's miracle. they sell it at petco. i have three cats and it has gotten the smell out of everything from my brand new, restoration hardware, leather sofa to carpets to hardwood floors. the only thing i have found that really works.
editing to let you know that i have tried all of the other home and store remedies listed in this thread (besides the killing the cat advice :)) and the above product really does work. no, i do not sell it, it has just saved a lot of nice things from the dumpster at my house.
