It takes time to move from drinks to cook line. Give these people time to blossom before you thrust them into fries and patties.

Schedule some time with them to sit down and discuss what you're doing and why you would like to involve them. That shows them THEIR value in what you're doing before you get to the value YOU get out of them helping.
Currently, they're obviously only seeing your needs as you bounce around asking questions in an unorganized manner.
ETA: People are busy. Maybe even people aren't that busy and they overvalue their own time. In either scenario, you're not going to get very far if they feel you're demonstrating that you do not value their time.
Every person likes to be communicated with in a different way. Clearly with these people, IMs and drive-bys did not work, so try a different approach. You need to adapt to what works best for them, rather than expecting them to adapt to what works best for you.
