A few years ago I was on a flight to Atlanta from New Orleans. I was sitting in the aisle seat and struck up a conversation with the woman sitting in the middle seat about 10 minutes before landing. She told me she was traveling to Atlanta for a cooking competition. When I asked if she was a chef or in the restaurant industry she said she worked for Chef John Flose...who was sitting next to us in the window seat. So I agree with you that I would not recognize Chef John Folse at the airport...given that I did not recognize him for nearly the entirety of an 1.5 hour stay on a plane where he was sitting two seats over from me.
I did, however, recognize Bill Dance on a flight to Memphis once because his goofy Tennessee ball cap was hard to miss. I'm also pretty sure his clumsy arse hit his head on the overhead bin.

I saw Bryan Adams on an America West flight from PHX to LAX in June 1994.
He was easy to spot.

I have been on flights with both DeAngelo Williams (from CLT to MEM) and Warrick Dunn (from ATL to TPA). Both really nice guys.

Sat next to Samuel L Jackson on a flight from Italy once. Asked him if he wanted me to call him Mr Laurence Fishburne to keep up the cliché of him always being confused for someone else. He laughed which I guess was a good thing.

Even if I did and I have before I just ignore them
I ignore them anytime I see them in a bar, restaurant, supermarket, etc.
I used to see Drew Brees and all the Manning’s including Peyton and Big Archie at our kids sporting events all the time.

Had Dennis Rodman get on a plane with me. This was a few years after the Korea debacle. Believe me, its hard not to recognize that guy.

I'm good with faces, so I recognize people pretty quickly. Last trip to Vegas, while flying to lax, Jimmy Johnson was on my flight.

I was on a flight with Darren Sproles when he was on the Saints. Recognizing him as an NFL player was challenging.

Hulk Hogan was ahead of me in line at the airline counter in Tampa about 15 years ago. I was warned that he doesn’t like strangers approaching him.

I see politicians flying coach all the time.
I’ve sat next to Austin Rivers in 1st Class once and I knew who he was and he knew I knew but we never mentioned it.
I’ve also spent the day and had lunch with Capt Lee from Below Deck, picked him up from the airport and drove him around all day, had lunch, drinks and dropped him off back at the airport.

I was on a flight in first class from Burbank to Dallas with Smokey Robinson. Took me awhile to work out who he was but he had these weird rock n roll type cloths no normal person would wear.

I was on a regional flight with Kurt Russell once. He was hard to miss with his "I'm not the real Kurt Russell" shirt.
