just do your homework if you are hiring a "contractor". Post-katrina, the "contractor" who came to my house to give me an estimate for sheetrock had a magnetic sign on his pickup saying "Pool and Patio Decks"

It depends on your definition of custom. I not would consider these to be custom. We probably could have gotten away with only doing the lower doors and shelves and saved the counter tops but my sister was not crazy about them anyway so we opted to take them out.

He restores old homes for a living. He's coming with cabinet material, insulation and sheetrock finishing material (mud, tape, mixers, blah blah blah)

My folks got their house redone in a little under 4 weeks in Bayou Vista, TX after Ike. They paid their contractor cash and didn't have to wait for their check. His guys were waiting in the driveway and started demo and mold abatement as soon as the insurance adjuster pulled away.
He was out of Florida and dealt with his suppliers from there for counters and cabinets to avoid lead times and backlogs.

I can almost assure you that it won't be dry enough to re-rock. You really need to get a moisture meter and test it. If you close those walls up and it's still damp, that house is fricked

You have to also factor in time to let the house dry out. That can take up to a month depending I how long the water sits

It will be close. It's not our first rodeo so I'm confident we can get it dry.
