You know, that 70s style wood paneling.

I think it'd be a PITA. You'd need longer drywall nails to go through the panel and the stud. Just use a hammer and tear out the paneling

Main issue is moving the electrical outlets out some So they fit flush.

You have to remove your door trim, baseboards, quarter round and all electrical outlets so just take the paneling off. Its the easiest part of all of it.

Don’t cover it, pull the paneling out like other’s have said.
Then go back with the new sheet rock on bare studs.
PS: Seems like Owlie posts frequently things about liking “bare studs”, ask him for advice.

I have seen people put putty in the fake dividing lines in the paneling. Sand it down and paint the paneling. I have also seen the same thing with wallpaper on the paneling.

That would be a lot of work and a lot of mess.
Hell on that

A sheetrocker can mud over the ridges in the panels, then texture it like they would sheetrock.

I would never try that on paneling that is nailed straight to the stud.

That's a good solution.
I pulled my paneling. Replaced with Sheetrock. All the damn door trim needed redoing due to thickness. Trim base boards replaced.
Just mud and sand the groves.

This, prime with Kilz, then skim with joint compound. Sand and paint. I have done this many times. It is important to prime with an oil based primer (kilz) to keep any old varnish from leaking through.

I’ve seen a few rooms where paneling was painted. I was skeptical when I heard about it, but it works.
They did not mud the grooves, and it looked fine. There is a special primer that has to go on to make the paint stick.

I can't imagine why anyone would replace wood paneling with sheet rock. Painted white it's beautiful.

I don’t even try to hide my wood anymore.

We had Sheetrock under our old paneling. You might want to check that first.
