They are only hard to peel if you overcook them. Then they get mushy and stuff.

The good Louisiana folks from Far West Louisiana struggle to make good boiled crawfish even when their livelihood depends on it (because they sell boiled crawfish at their shop).

Nobody out here knows EXACTLY how to do it PERFECTLY. There's always some little thing wrong.

I agree about soaking till they sink, they always sink at about 7min for us. Pull some out after sinkage occurs, test for juice in head and easy to peel, tail pops out of shell with minimal effort. Damn I love Crawfish

Don't think I've ever had crawfish sink this fast for me. I'd say it's typically somewhere between 20-40 minutes.

I shut the gas as soon as the water gets back to a boil after adding the bugs. No shot at overcooking, just let the soaking do its work.

More than one way to skin a cat, I just found I've had the best results that way.

That's funny, you've never been in the top 10 in any competition I was in. Some of the OB guys have.
