re: How do we know restaurants serving pancakes are not using store bought add water mixes?

my 'go to' pancake recipe is the one in BHG cookbook. (red/white gingham cover). with buttermilk and I make the batter a little on the thin side.

Use fresh blueberries and you will never go get pancakes anywhere else.

Completely agree with your post.

Except "pastas are boiled"

To anyone who cooks or enjoys good Italian, not immediately adding sauce to the pasta is about the biggest mistake possible.

CB's are very good. You should try the Aretha Franklin pancakes at Crockett's Breakfast Camp in Gatlinburg if you're ever in the area. My wife buys boxes of the mix and real maple syrup for stocking stuffers at Christmas.
