Poland was just a stepping stone to attacking the USSR. It was a key element of Nazi ideology going back to Mein Kampf. Germany had nearly starved in WWI due to the Royal Navy blockade. Germany s future food and fuel security lay in the east. In addition, Hitler had his own version of Manifest Destiny, most likely influenced by his boyhood reading of dime novels about the American west. He believed a multigenerational struggle against the slavs would keep Germany vital.
TL;DR, the invasion of Russia was a feature, not a bug. It wasn't a stupid mistake on Hitler's part, it had to happen for Nazi ideology to be internally consistent.
