If the cop used lidar, you can contest, but it's likely you won't prevail.
If the cop used radar, and especially instant-on radar, you'll have a slight chance, because instant-on radar without doppler audio to verify the displayed speed calculation isn't as accurate as lidar. But you're still in court, and the court is going to choose to believe an officer of the law over Joe Citizen.
My suggestion is to call the DA office and see if you can plead it down to a non-moving violation, pay the large fine, and try to attend a defensive driving course. Or contest it, and hope the police officer doesn't show up.

I thought some newer cars have some sort of data recorders on them?

Maybe, I don't know. However, most people have some sort of GPS tracker that records data, i.e. Life360 or a dash cam.

I use a dash cam - and it records my speed, so if I ever get pulled over and the police officer tells me I was traveling at a different speed than what I believe I was traveling at, I can easily verify this, and contest it, if need be.

Why? Because he bumped into someone who faked injury and sued him or because his car wasn't insured? No, he has nothing to do with our high insurance rates. Going 10 miles per hour over the speed limit has no effect on your insurance premiums.
