Because theres more demand from the major cities than the smaller cities likes nola or baton rouge. Sometimes you can book a hidden city, meaning you skip the last leg of your itinerary. Say you book msy-atl-cdg-atl-msy because it's cheaper but really only need msy-atl-cdg-atl. You could skip that last leg. I've never done it but would if the price was right

Just don't can't check a bag. Also have to make sure it's one way. Never done it personally, but I've heard they may boot you off the flight back if you don't follow through.

You CAN do this but many (if not all) domestic carriers can and do boot you off the return flight even if you are at the terminal destination or give them some kind of heads-up like you got ill during a layover. They keep a naughty list of jumpers.

TSA has stuck their nose into this as a passenger safety issue and does not look favorably on the practice. The PanAm 007 (Lockerbie) bomber was booked through to JFK and jumped off that plane in London but left his checked luggage (including the explosive device) in the hold of the 747. Syracuse students returning from studies abroad were heavily represented in the death toll. Very tragic.
