Buy a used bike for $600 and you will have a bike that was $1200 new with a few scratches.

Found an older model Raleigh for $299 at Baton Rouge Cyclery.
It’s a strong, light, frame. Great bike for that price.

Easily the best answer. $600 new bike is garbage.

Go on Facebook and find the local trail groups. Join the groups and post a message in there.
The ones in Houston normally have people selling used bikes or new bikes all the time.

So turns out, my father is giving me his older Cannondale CAD3 (circa 1998?). He rides his Gary Fisher Suger 1, so the Cannondale is not getting used. I am going to have the bike shop completely update it. Going to get an estimate this weekend, will keep posted! Looks like the one pictured except bright orange and obviously dated components.

Dude. A 1998 bike is going to have 26in wheels. You're sacrificing a lot by going with such outdated wheel size.
You're going to spend a shite-ton getting it "completely updated." Take that money and get an entry 27.5+ or 29 Felt, Specialized, Trek, Giant like others have pointed out.

Might be a dumb question but couldn't I just have them add larger wheels when updating?

You'd have to redo a lot for that to happen. Brakes, Fork, Frame, basically a whole new bike.

I highly doubt it. Frames are made to fit a wheel such as the greater radial distance from a 27.5 hub wouldn't fit into the fork distance of a 26in bike.
Some new high-end bikes are able to interchange 27.5 and 29s but nothing to my knowledge older than 5-6 years old.

Disagree that 26" wheels are a problem - especially for Louisiana riding. I'd upgrade the cannondale and never look back.

True...to each their own. But for my $600 (advice) I'm going to take the confidence of being able to roll right through a washout or right over a root sticking 6inhes above grade verses not having my front wheel suddenly stop in either scenario.

Agree with going the used bike route for $600. Most new bikes in that range will have a heavier frame. Also agree that the 29er or 27.5er is better if you can find one at that price, but a 26 is fine for entry level. You can always upgrade components gradually as your riding advances, except wheel size of course.
Not sure what earlier poster's problem is with Cannondale. I sure wouldn't rule them out if it's the right price, frame, etc.
