I use Tonys creole butter injectable marinade. Inject the bird, get plenty in the breast. Coat skin with Tony’s.

When I hear the oil I like to get it just above 350 and dunk the turkey. The oil sears the seasoning to the skin. Keep it about 330-340 for 3mins/lb. remove and check the temp in the thickest part of the breast.

I've been using offset smoker my whole life. Now that Dad died I have 2 cast aluminum offset smokers that will outlive me!

Nothing better than hickory smoked turkey unless it's the soups/gumbos made from boiling down the carcass of a hickory smoked turkey.

I'll second the oil-less alternative. Got a Butter ball one from Wal-Mart for cheap. Make them year round. Love them. Healthy. No mess
