Fried turkey is extremely overrated.

Yes.

There's absolutely nothing at all special about it.

I think the best way to do a turkey is wood roasted at oven temperatures (not slow smoked) in a komado type grill.

The key to crispy skin and to keep it from getting soggy is to make sure it is frozen when you drop it in.

Key word there is "drop". You gotta drop it in.

Make absolutely sure the bird is bone dry before placing it gently into the oil. Lower it slowly because no matter how much you dry the turkey, it will really go to boiling when you add the bird.

Get the oil to 350 and the bird will take it down to 325 or less. Get the oil back up to 325 and cook it for 3 1/2 minutes per lb.

Don't walk away for long and get busy as the fire needs to be maintained to keep a constant temperature.

You can inject it the night before and put it back in the fridge. I don't cook turkeys over 15 lbs. in my fryer and generally stick to 13 lb. birds. That way it's roughly 45 minutes in the oil from start to finish.

Remove it from the oil and let it drain over the pot for a bit, then move it to a cooling rack and don't carve it for about 1/2 hour after it is done. It will still be plenty hot to serve.

I usually rub just a bit of olive oil on the skin and season the outside with Slap Ya Mama and some black pepper right before frying. If you don't oil the skin, the seasoning will not stick as well.

Like already mentioned, don't overfill your oil because the turkey will displace the level quite a bit when put in the oil to cook.

I have a designated turkey frying pot and will use about 3/4 of the peanut oil in the container.

Back when I had an offset smoker I carved up a whole bird and smoked it for thanksgiving one year. Way better than the dried out mess from baking a turkey and less risk of burning the house down trying to fry one. My wife isn’t big on turkey, prefers ham, but she said it was the best she’s ever had.

You need to step your game up and inject your turkeys if your frying them. Seasoning the outside doesn’t do much at all

I agree with infrared cooker, oil free fryer, what ever you want to call it.Tastes just as good and don’t have to deal with oil.
If you are determined to fry in oil,put turkey in pot and pour in water until turkey is covered.Take turkey out and mark the water level inside pot.Pour oil in to that level, that way oil won’t overflow when you put turkey in.

Make sure it’s thawed out completely and don’tnfill over the line on the tank. 3.5 minutes per pound do at least a 14/15 #’r

What part of "inject them the night before" did you miss? I do inject my turkeys prior to frying and do so with my own blend of seasonings to make my own injection mix.

For best results, put in frozen. It’s to die for.

I marinate them in Stubbs Chicken marinade for 4 hours. Season with something sweet/spicy. Smoke in apple wood till 172 degrees internal temp.

Poppin!

Preparation is key. The day before, get a couple of local burn units into your speed dial.

ETA: and check your web cams to make sure they're all streaming successfully. We don't want to miss anything.

I’ve never found rolling papers big enough to smoke a turkey.

Not even close. You can make a tasty bird, I'll agree, but the moistness and flavor can't be touched.
