There is absolutely zero shame in her community. I've never understood it, but it's as if the trashier and less civilized you act, the more accepted you will be.

I'll never cease to be amazed by the power of the OT. The comments on her YouTube video are already putting her in her place. I recognize some user names. 
I'm glad people are putting this into perspective for the potential viewers that don't have a clue, but then again, if people want to make it a race issue, they'll do so regardless of the facts or true motives

She did not order a meal. She ordered the Bayou Salad. Here is a description of it from their menu.
BAYOU SALAD
Grilled shrimp and fried crawfish tails on our spring mix salad, tossed in our pao dressing, topped with croutons, diced tomatoes, diced cucumbers, black olives, and fresh avocado | 15
This is what they brought her. She got what she ordered. She is unfamiliar with the restaurant, their food, and menu. She chose poorly and had buyers remorse.
She is fat, to an unhealthy level. She ordered a salad, then sat and watched all the good food coming out to others tables. When her salad got there she had changed her mind due to the eating habits that have made her morbidly obese.
She claims to be religious and educated. She is neither. Turning into Sharkeitha at the drop of a hat explains who she really is.

So an African tried to get something for free, then caused a scene because she couldn't get something free. She then blames the European-American of being racist. I'm absolutely shocked. At least the waitress will only miss out on a $1 tip.

I didn't read all 17 pages, but I'm going to be very stereotypical and say that when I was a server, I saw this kind of thing all the time from certain demographics.
They would eat 3/4 of the meal and then complain that something was wrong with it and then absolutely refuse to pay, demand to see a manager, and cause a scene.
Not saying that this is what happened here, but it is what it sounds like to me.
