You're welcome. Also, he was wrong about the appetizer. It's not included unless you get the premium plan which is almost certainly too much food.

We are going for Mardi Gras too and we got the meal plan
I plan on keeping it but I do kind of regret getting it the more I think about it
We aren't big dessert eaters and getting a dessert at every meal isn't a huge plus for us.

NO! We stayed at the Yacht Club ... it was fine! And at the back entrance to Epcot. We were in the same situation with a family of 5.

If you are going to eat any meals in the park, get on the meal plan.
Also, make your reservations now if you can, because you need to start trying to get the fast passes and dining reservations. Mardi Gras is pretty packed at Disney, you are already extremely late to reserving shite as well. You will have a hard time getting what you want.

If you get the meal plan, you only "break even" at about half of the restaurants per meal, and that's only if you choose one of the few most expensive meals.

Do you have any credit card rewards program? I use the Marriott resort just across the interstate and use points to get a free room. Awesome resort. Amazing pools. Shuttles to Disney if you don't want to drive. That's how we save money.

I will echo what several people have said....I don't think the dining plan is worth it. At least, it isn't for us based on how we "tour" the parks. I've had the plan through several iterations including the original which gave each person and app, entree, dessert AND included gratuity. That's changed considerably since then. But, we got the plan for free back then. And, it's the only way I would consider getting it again. But, free dining is usually offered in lieu of a room discount which I would prefer taking.
The "regular" dining plan works if you are hell-bent on eating a sit down, table service meal each and every day. Us? We don't. We're fine hitting counter service for most of the trip.
