Don't think you have to go with a kid to have fun or for it to be worth it. Disney can be experienced in multiple ways which means trips can feel completely different depending on so many factors.
How big is your party? Do you want to ride as much as possible as often as you can? Or take it slow and relax some yet still not waiting longer than 20 minutes for the best rides. Do you want control over the schedule? Or are you with others who've never been and you let them make those decisions and watch their faces light up like yours first did? Are you a foody who wants to try some of the better restaurants? Character meals? What is there to do outside of the parks on property?

Moneywise I found of came out to be nearly the same. Was convenient though. I find it nice to have the almost the entire trip paid for before we leave, outside of spending money of course.

It's only worth it if you can get it for free or you were already planning on eating at certain restaurants and don't get alcoholic drinks or appetizers.
So for most people, it's not. I've seen it so many times where people are disappointed because they felt guilty for wanting an appetizer instead of an entree or they didn't realize how much food it would be trying to eat the most expensive thing on the menu just to make it worth it.

Went to Disneyland by myself over a weekend when I was out there for work. I had an absolute blast.

We stayed at Riverside and it was great. Limit food purchases at the parks, buy stuff for sandwiches etc (you will have a small fridge in room) don't buy park hopper.

We did the deluxe meal plan one vacation and I felt like I never stopped eating. Would usually just have a snack for breakfast, then eat a sit down lunch with a signature dinner. I found with eating that many nice meals we were spending like 70$ a day in tips. The only thing the meal plan buys you is convenience to buy your food upfront and not have to worry about spending money on food while there.

It will make you a fat arse as you try to max the value out. And you can eat your way to beating the system and coming out ahead in the dollars if you add up the menu cost of the things you order.
But you lose out, filing up on food you wouldn't order regularly. Missing things you like, just to get the most expensive item available. Dessert overload. I hate New York Strips steaks now.
With the meal plan, you are now buying a Disney vacation package and paying for everything in advance.
When you book a room only, Disney has to follow Florida hotel laws and you get charged for only the first night at booking.
So yes, we did out eat the plan but were miserably full everyday. We would have been happier and spent less with room and ticket discounts and eating how/what we liked.
Would not do the meal plan again for our family but I'm also sure it will work just fine for others.

get the meal plan, well worth the price and almost every restaurant on property accepts it.. Think it averages out to $40 per person per day.
Buy Disney giftcards for the kids and let them make there in park purchases .. Makes them feel special and helps you control the gift shop purchases.
Mardi Gras is early this year .. Bring long sleeves and jeckets. Last year we went for Mardi Gras and the day time temps were in the 30s.. Wasn't prepared for this and spent a ton of cash buying stuff.

I was looking at the restaurants options and it's pretty limited. Only 3 restaurants at Epcot and only 4 at Magic Kingdom for the table service meals.

Get a disney planner. They know when the promo weeks start and free meal plans.

I've never heard anyone say restaurant options were limited at Disney before. There's certainly more than 3 restaurants for dining service at EPCOT.
The meal plan is good if you really like to eat. You get an appetizer, entree and desert with each meal. Which is a shitload of food. If you eat a later dinner for your table service meal you can bring the desert back to the room for a late night snack. I went to Disney last week and had 1 table service and 1 quick service meal left for each member of my family of four. Plus 4 or 5 snacks left. You can convert your table service and quick service meals to snacks 3 to 1. So before I left I loaded up on snacks from the gift shop for the ride home. It's was like 33 snack items to keep everyone fed on the way home. Still have about half of them left.
Getting the dining plan certainly wouldn't be doing Disney on a budget though.

Splurge some.
Eat at the character breakfast at Animal Kingdom. It's more economical to eat breakfast and it's Mickey, Minnie, Goofy, etc.
