I would be careful on Chows. They are freaking mean and aggressive. I wouldn't wrestle him, just asking for a bite.
Get a choke collar, get a shock collar, make him trail you when walking him in the AM, don't let him eat until you give permission, etc.
But in reality, with your girl friend there he was alpha of her and it will be tough to break that unless she participates.

In the dog world, the alpha is not always the toughest it's the best leader that dogs want to follow. He's got you backed in your beta corner and now you have to convince him that he should follow you. Hunger and training are good ways.
Sounds good. I will also make him sit before every meal. I'll start taking the lead on our walks. I usually just let him sniff where ever he wants to along the road. Apparently that is wrong too. Man, I suck at this dog parenting crap.

This. When you flip him hold him down and stare him down until he turns his head away. Repeat as necessary. He will fight to get away so you need a good hold to make sure he can't get away and don't let go until after he turns his head away.

If OP tries this on a 70lb chow mix, I'd suggest some of that thick-arse dog trainer padding. Might get bit a time or two.

Shock collars and choke chains help. If your walking him on a retractable leash switch it out to a four foot lead to keep him close so your in charge. I like those harnesses that attach around the dogs nose also. The idea behind those is if he demonstrates behaviour you don't like, you can pull on his face and redirect him. Nothing shows a dog he's not in control faster then redirecting him be his nose.
Otherwise make him mind you and reward good behaviour with treats and he might come around.
Chows can be mean sons of bitches so good luck.

Flipping him on his back isn't going to work - he is going to fight you like hell - he lays into you pretty good and you are going to have to hurt him bad or back off. You hurt him, your GF will be pissed (you started it, remember??) you back off and he really has made you his bitch. Take him to obedience class - you'll get it worked out there and you will score major points w your GF...
Make him sit before you feed him for a few days then make him lie down on his stomach before you give him his food... If he doesn't obey, no food, and do not let him sleep with y'all...

Anytime your dog eats pretend that you are eating his food. I learned this from a dog behavior/trainer. Remember dogs came from wolves you are his pack master. Only pet him when necessary. Don't be overly affectionate with him

Sounds like you need to establish yourself as alpha to the dog and the girlfriend.
But if it doesn't come natural, you won't fool either one.

He is a mix. Chow and German Shepard mix.
His hair makes him look a lot bigger than he is. Plus he sheds all the freaking time in the house. This is not him but this is almost exactly what he looks like:
Fortunately, we just gave him his summer hair cut. He looks smaller now. Looks almost identical to this picture.
Overall, he is a great dog. Just needs to listen.
