I'm so confused. If I go to an actuall butcher to make fresh ground cow/deer, I get it in a cookie dough type tube. Grocery store shite comes in a plate looking platter

So to me the tube indicates better

Ground comes to grocery stores in cases of these. It is ground up again at the store and put into a tray
