I tried that a couple years ago. The meat was more like 98/2. The Fresh Market "Tuesday special" was truly the worst ground beef I've ever bought anywhere.

Yeah, I prefer the whole cuts ground for the same reason.

Only ground meat we eat is sirloin so that really doesn't help. What does help is buying a whole calf and having it processed like you want.

I bought half a calf at benefit auction Sunday for $325, by the time I split the slaughter fee and pay my packing fee I'll be paying about $2.75-$3 a pound.

No.
They have beef, pork, alligator, chicken, buffalo, deer, elk, and possibly bear as well.

What prompted this thread? And in general, I like grass-fed for the omega-3s. If I'm getting a steak, sure, I'll opt for the corn-fattened dry-aged.
