Is this during the week during work hours? Assuming this is the case, feign a last minute project/report that you have to finish during the lunch hour, and meet them for dessert/coffee after lunch.
My issue isn’t the vegan thing at all. If you attend one of these, you’re on the hook for the subsequent ones. Best to not go and nip it in the bud.
This is all assuming it’s during work hours. If on a sat/sun, just politely decline.

Yea assuming you can avoid carrot hot dogs and jackfruit ribeyes vegan food can be pretty good.

I wouldn't go and never felt a need to offer an explanation. Co-workers are not friends and no reason to treat them as such.

If there's really nothing on the menu you are willing to try, I would eat a big breakfast and go to the lunch but not order anything.
Or show up with some bbq ribs and eat them in front everyone while they eat their vegan dishes.
