I definitely remember when 15% for good service was the standard. The idea that a server deserves 20% just for making it through the meal and collecting payment is a product of the Internet Age and the megaphone of bitching that it gave to the lower class.

You're thinking of Justin Wilson, aka Chef False.

Best response in this thread about people who own restaurants.

People love to shite on successful people but word on the street is that he is an a-hole and a completely different public personality.
I grew up in Donaldsonville and know multiple people who know him personally. Half say that’s true and the other half say he’s a great person. I’ve met him a couple times and he just seems like he enjoys the fame and attention but overall seemed like a nice guy.

worked for Uncle John at White oak Plantation and at the old Lafitte's Landing.
You speak the truth, anyone that has worked for him can collaborate the truth. He’s a grade A a-hole but definitely puts on a show for the public. And he’s notoriously cheap. He woukd make his elderly father pay for his meals at Lafittes. And his wife was a wine o, getting drunk almost every night on bottles of wine…

As most made up Characters, they are gruff when questioned. People that push the envelope when they are in the limelight are basically baffling with bullshite.

Met him a few times. He seemed like a real prick so I avoided talking to him. This was in like 2004 or so.
