The only location I ever been to was the original. Been there a number of times. It was a default place. One of those places where, when you didn't know exactly what you felt like eating, you went there.
60% of restaurants fail within the first year. 80% fail within the first 5 years. Unless you franchise, its extremely risky to open up multiple locations and have success.
If the original location has a lot of success, you can have success with one more location but to go beyond that, franchising is how you cut your risk.

I agree with your premise. Places like Sammy's are dying out and will continue to do so as the old people die off. Young people aren't really interested in fried seafood platters like our grandparents were.
But I don't think we will be left with none. It will just be a matter of the last man standing.
Parrain's/Chimes will continue to flourish IMO, as they are the go-to spots for out of towners. It would be weird to visit Louisiana and have zero places serving "Louisiana" food.

This makes me think about Pastimes. I know older people.. 50+ who can't go to a LSU event without going to Pastimes. I know a few older guys who have season tickets to LSU basketball and they go to every home game and every time they go to pastimes either before or after the game.
For me.. Chimes is that place. While I don't go EVERY TIME I attend an event at LSU, I do go there more times than not and there are times I go when there isn't an LSU event, but Chimes being right outside the north gates will make it a spot for quite a few generations.
Chimes has what? 3 locations? The original, East and one in St Tammany parish.. If they have more I am not aware of them.
That's two locations, one on each side of Baton Rouge then another one closer to New Orleans so they are not really taking business away from other locations.
I wouldn't really put Louisiana Lagniappe in the same category as Chimes and Sammy's. There are dishes there that you can't get at the other two mentioned, but you are correct. There needs to be places to get "Louisiana food", but the ones that will survive are the ones that have been around for a while (and is able to successfully manage it).

I could take a shite on them, but I won't. Mainly because not one of you could have done what Sammy's has done. No, not one of you.
But with that said, Sammy's is an old bloated fat bitch who needs to cut everything back to the bone, then rebuild.
