Not bad choices, but if you are there between 8:45 - 9:15 am, you won't really need a FP+ for the Safari if you wanted to use it somewhere else.

First things first. Kids want to play. Whether they are in Disney or at Uncle Cletus's, they want to run around and have fun, so look for any playgrounds or fun shite for them to climb on, like characters.
Breakfast - book this each day, early as possible, at the park. Crystal Palace for Magic Kingdom, Akershus for Epcot, Tusker House for Animal Kingdom, and I forget the name of the one right by the 50's primetime in Hollywood. This gets you into the park before it opens, and allows you to bypass waiting in line. If the park opens at 9am, make breakfast for 9:15 or a few mins after. That way, you go in early, walk to the attraction you want, ride it, then go to breakfast.
Now for 2y/o's -
Animal Kindgom - Safari fa sho, Nemo, boneyard. Rafiki's Plantwatch has a train ride to get there if they like trains, and a petting zoo. This is a massive time sink and boring though, avoid except to ride the train. Kali river rapids also has a low height requirement, not low enough for 2yo's, but others reading make a note.
Epcot - Nemo ride, Figment, Ellen's Commercial Ride, play in the Innoventions Place, Maelstrom, fireworks at 9pm, and go listen to the England band and let them run with the other children through the hedgemaze, provided you have the adultpower to cover the exits.
Hollywood Studios - Avoid this park. They have the great movie ride, which they won't like much. Muppets show, Honey, I'm Rick Moranis Playground, backlot tour. Indiana Jones maybe, Cars NO. Cars is fun, but it takes soooooo long to do, it's a daykiller.
Magic Kingdom - This is where you want to spend your time. Fantasyland is great, Tomorrowland, meh. Everything here will be fun.
The plan we used at 2yo was go really early, leave around 2pm. Nap if they nap, swim if they don't. Eat dinner at hotel, or the park you go back to. We would end up at a park for 6pm-10pm or so, kids would sleep on bus ride back, we would get in, pack up for the next day's haul, and go to sleep for 11:30pm after a quick bath/shower tap.

I was just able to get a reservation for my daughter and me, so the others can do a ride and I'll take her to meet A&E.

Enormous fail
If the park opens at 9 and you have to eat breakfast, you want a 8 am or 8:05 reservation before the park actually opens.
But again, you will do MUCH better doing attractions at 8:45 - 9:30 am and eating a character meal at noon, then sitting at a character breakfast during the least crowded time of the day then trying to ride stuff and see shows during the hottest and busiest times of the day.

Possible, but highly highly unlikely the mine train will have any availability after mid morning. Even if you book the earliest time frames available (9-10, 10-11 and 11-12) then walk to a kiosk by 11:15, they would probably be all gone.
I also forgot about the play area at the end of figment, and the playgrounds in Hollywood Studios (Honey I Shrunk the Kids) and Animal Kingdom (Boneyard) the kids love them all.

this... That's what I do when making Breakfast Reservations ..make them as early as possible

Tusker House is one of my favorite character meals inside any park. Their lunch is legit.

Not this year..we're going for Not So Scary Halloween Party. Wife and I did F&W last year, this year we decided to bring the little one to the Halloween and Christmas Party so I'll actually see two LSU games from Disney this year....Sam Houston and aTm

Gotcha, I did F&W last year and watched LSU/FL at the Bar next to Yatchsman. I wanted to do the Halloween party with kiddos this go around , but have had to postpone annual trip

We did Animal Kingdom this past May without using a fast pass. Just get there at park open and ride what you want. We did all the rides and were done by noon. Save your fastpasses for the afternoon in another park.
Do the Safaris FIRST THING IN THE MORNING!!! It is unbelievable how much more active the animals are in the morning!
Also, do not bring a 2 year old to see Its Tough to be a Bug! That show is extremely scary for a kid and you can book it that about 10 kids a show are escorted out screaming their heads off!

Our daughter is content on any ride with a boat or the carousel. We found ourselves back and forth between the carousel and It's a Small World in January (she was 21 months then). She had a blast on both. Pirates was also one of her favorites. And i'm proud to say that I think I got her hooked on riding the TTA Peoplemover
The train is always a fun ride too and don't overlook the steamboat circling the Rivers of America.
We want last October and then again in January...not sure when the next trip will be though. I do want to make it there for the Epcot Flower and Garden Festival one yar.

Next trip is for marathon weekend. Currently in a planning hiatus after booking our restaurants at the beginning of the month. FPs open up in November.
Two places we wanted to eat that we couldn't get were the Castle for breakfast and the Spirit of 'Aloha. CRT is being renovated and SoA has a chance of being cancelled if too cold; didn't want to risk it. Also, we were hoping to book Harmony Barber Shop for ell jr.'s first haircut, but that, too, will be closed for refurb. We did book the Keys to the Kingdom tour where they take you through the Utilidors.
What we did get:

California Grill (timed with the fireworks)
Raglan Road
Be Our Guest (it's meh, but some in our group hadn't been yet)
Cape May Cafe
Sci-Fi Dine-In

'Ohana
