Baton Rouge area pilots need instructor recs NSFW

I'm looking to get my PPL beginning next month. I'm in Ascension and would love to find an instructor based out of the Gonzales airport. Any and all advice would be greatly appreciated!
I've flown a trial flight out of the lakefront airport in NOLA. ONLINE ground school rec? CFI recs welcomed...I'm HOOKED and happy to finally realize this dream.

Gulf Coast Aviation, I believe, still has a presence in BTR. Otherwise, Fly by Knight in Hammond.
Start reading PHAK and AFH. Both are free from FAA in PDF format.
Sporty’s, King, and Dauntless are popular for ground schools. I believe Dauntless has audiobook classes.

Being a pilot is my dream as well, but for now, it will remain a dream. There's no way I could afford the instruction programs, and I'm too short to be eligible to be a pilot in the military.

Not in La. so I can’t help with that. I can say that flying is expensive to learn, but more importantly, it’s expensive to fly enough to keep proficiency. I wouldn’t take anything for my experience flying and I would never tell anyone “don’t do it”. I will say that you really need to evaluate your goals and what future flying REALLY looks like. I know there are quite a few pilots on here, some very experienced. Good luck finding the right instructor.

There's a range for pilots, and that's too short from what I was told when I was in HS by recruiters. I think 5'10" is the minimum.

IDK when or who told you that but you're well within the current parameters for all branches.

I was also shorter when I was in HS...that was also 15 years ago. Standards have changed a lot in that time.

Just finished my PPL a few months ago. Don’t have any recs for your area, but my advice is to go with a reputable company that has a good maintenance reputation.
Ask around, network, and do your research. A bad pilot school can make or break you as a pilot as well as your piggy bank.
Find a school that has several planes of the same type that you want to train in. Or at least a good mechanic that keeps the thing healthy.
There are two killers of flight time. Weather (which you can’t do anything about) and broken planes. See to it that you don’t have to fight the second one.
I also recommend flying as much as you can per week. Jobs suck and certainly get in the way of it, but if you can swing the time…shoot for 4 days a week with 2-3 hour lessons.
You’ll retain the info longer and will progress quickly.
Good luck!
ETA: also consider flying with multiple instructors at first. You may be tempted to go with the first one you fly with, but don’t. You’ll be spending a lot of flying hours in the cockpit with this person, so make sure you’re comfortable with them and they know how to teach you to best suit your learning ability.
