She did have to show me how to use the instant pot, but I do food prep once a week for the entire week and put it all in a separate fridge in the garage.
It is taking me away somewhat, but she’s spoiled because I only work 22-25 weeks a year on the road and am home the rest of the year. An hour a day lifting, 3 hours on Sunday prepping, and I eat separate from the family every 2.5 hours. I will sit with them while they eat and eat my food if meal times coincide.
It is costly, but that is not her problem. She doesn’t work and isn’t on a budget or anything.

I have nothing but "you're doing this all wrong".
I was fit as frick in another life with 4 kids and ate their food. Just alot less of it. You need to eat ice cream and nuggets with your kids. Learn about them. They talk the most about themselves when you're sitting across a shitty fast food or gas station table sharing a plate of bad food.

Ok, serious answer here with regard to why your wife is not liking your self improvement efforts.
You know the phrase "Men marry a woman thinking she'll never change and women marry a man thinking he will"?
There are probably a lot of things over the years that she's wanted you to change. Now she's got a case of the arse that you're putting the time and effort into changing something that YOU want to change instead of something SHE wanted you to change.
