For AI to have a purpose, there has to be a demand. There have to be consumers that need it. Humans aren't going anywhere. They will adapt. Maybe we will get back to our roots and start growing our own food instead of depending on other people to feed us. It may be a great step forward.

I agree with you. The economics of capitalism rely on destructive innovation. The people whose activity is replaced by more efficient activity suffer some dislocative pain. In almost all such cases they wail and moan. it was true of buggy whip manufacturers and it will be true of architects who are replaced by AI.
This tendency of capitalism to constantly innovate, improve and replace has been going on for a couple of hundred years, and it was going on long before capitalism - just slower. The critics of AI have so far been unable to articulate why it is different, even though it is a simple concept. What makes AI scary is the rate at which it could destroy and replace. This could represent the first time in history that the replacement takes place at a rate too fast for our economy to absorb the displaced workers. In the past, when this happened on a small scale, we made up for it with welfare type policies and payments.
It is going to be a challenge for our governors to find a way through this, either by slowing down AI implementation or by mass welfare (guaranteed income).

Humans are prone to use innovation to the detriment of most other humans, which is what will probably happen. I disagree with your statement only in that it could be used for widespread good, but will hurt producers the most.
Utopians sell AI employment takeover as a freeing of the population from being tied to wages, but they will just tie the population to a menial UBI payment instead, which will have detrimental effects for most.

Growing our food isn't an option for a lot of people. Maybe there isn't enough land, maybe the land isn't for sale, or maybe they can't afford it. Regardless, for us to get from where we are to people having to grow their own food, billions will die.
And is there really a need for humans? At the beginning of the 20th century there were no cars, little electricity, and flight hadn't been accomplished. At the beginning of the 21st century the cell phone was still a novelty for most people, and robots were something from sci-fi. Now, a new cell phone comes out every year that's more powerful than anything ever made and we have AI that can think for itself.
If you think AI and robotics is going to need humans by the 22nd century, you're not paying attention.
Technology advances exponentially.

Humans use innovation to benefit the population. There are collateral damages, but the intention is to better our standard of living.
