It’s because of a set of European laws that is supposed to protect your privacy. Part of them stipulates that you can’t store information about a person without their permission, especially when you do it unknowingly. This is what those cookie accept buttons are designed to do, get you to sign away your rights to your own information.

Of course, the amount of information might be minuscule or have no importance, so it also comes with that problem.

What I hate more is the turn off add blocker pop ups. Disable JavaScript and you’re through...

Here is an alternative phrasing:

"I am sick of having to click the 'accept cookies button'".

As you can see, this is easier to type and much more to the point.

I also really hate the "You do realize that ..." instead of just stating whatever fact a person is apparently unaware of.
