Just meet up back at the hotel bar where everyone is staying. This avoids out of towners walking around late night getting knocked out and robbed, plus it's an easy segue for your friends who are trying to get bridesmaids back up to their rooms.

I had my rehearsal dinner in the Quarter as well and we all went to Ricks after the dinner.

This. Rehearsal dinner after-parties are supposed to be informal gatherings.
Another thing to keep in mind (because I don't think it's been mentioned yet) is that out-of-town guests may scoff at too many scheduled gatherings during the weekend.
Depending on where you live, out-of-town guests may want to do their own thing or go to old hangout spots to reminisce.
Forcing people to adhere to a set schedule for the entire weekend can be very counter-productive.

Plus, you're not supposed to see your bride after midnight...so when she goes home, you get more hookers and blow

We had a ton of people from out of state for our wedding. We all headed out to a blues club until late but I did not cover their tabs

It was there idea, ha. I wanted to do it at NOLA brewery but they shot that idea down quickly, plus NOLA can't serve wine.
Anyway, It seems like the after party is not common here on the OT. I've been to a few weddings that had after parties but they were either destination weddings or thrown by a family with a lot of money. We feel bad because we have a slew of friends coming in from all over the country that will not be invited to the rehearsal and wanted to give them a little extra for paying for plane tickets and hotel. We understand how expensive traveling for a wedding can be.
Anyway, It seems like the after party is not common here on the OT. I've been to a few weddings that had after parties but they were either destination weddings or thrown by a family with a lot of money. So you already caved to your soon to be wife on this one, huh.
You're paying for their food and drinks at the wedding, right? An after-party is excessive and not necessary, but I have a feeling you already tried to tell your bride this and she bitched you out so you bent the knee.

My wife insisted we do this.
Since we had the venue for the whole weekend, we just did an "after party" at the venue. Bunch of people showed up with wine, we supplied some beer, and brought a bunch of the leftover food from the rehearsal dinner for folks to snack on.
