Their numbers are extremely similar when looking at the per 17. Olave has more catches and yards by a small bit, Zay has a slightly higher ypc and a better catch % (but some of that is on the QB and ball placement).
My guess is the difference in price is more down to the concussions and blood cot than actual play, though Chris said he could have done more to hold out and try to get more and didn't want to be away from the team to do that.

The difference is in the YAC and YPRR. He had more yards on significantly less targets and is more physical despite being smaller.
