Redemption Song
Or a dozen other songs that use nearly identical chord progressions, although Redemption Song is one of my faves for the sing along aspect.

Same four chords over and over.
Cover of an old 60's song. Because there were so many songs about car crashes during that era these chords are often referred to as "dead teenager chords"
G - Em - C - D
or
C - Am - F - G

I learned how to sing and play simultaneously with a lot of Texas Country.

Zombie - Cranberries
Highway to hell - AC/DC
You really got me - the Kinks
Wild thing - the Troggs
These are all pretty simple and the solos are easy. I think the guitarist for the Troggs said if you can't play Wild Thing, then you need to play a different instrument.

Margaritaville. Slow enough, easy chords, and easy changes. Also teaches you a useful strum pattern.
