I’ve never heard a guitar that sounded as good to me as $2k, let alone $12k

Every major upper-echelon manufacturer is turning out expensive guitars, explore their lines. There is a market for them, so satisfy demand. If you don't, your competition will.
As for more "why," you can start by pricing out tonewoods that's equivalent in size and aesthetics to what's pictured in the OP. I just ran a quick Google shopping search for 5A flame soundboard grade koa. The cheapest hit was $250 for the two raw planks and they weren't as pretty as what's pictured above. Keep in mind, you get one shot to acquire, one shot to plane, one shot to cut, one shot to join, one shot to drill, one shot to rout, one shot to glue, one shot to finish ... care to guess the annual salaries of the master luthier(s) doing that work?
kingbob, get your hands on a $6-8K MSRP Bourgeois, or Lowden, or Collings, and tell me honestly you can't hear or feel the difference from the typical Nazareth-made Martin D-series. I promise you that you can.
$12K acoustics? I can sit on either side of that debate and very successfully argue all day.
Edited to add ... I just did a Reverb search for brand new acoustic guitars priced between $10,000 and $250,000.
I got 333 hits.

Tbh, I haven’t played a lot of acoustic guitars, and most of the ones I have played were probably in the $300-$800 range.
You’re talking to someone who plays on knockoff, lawsuit era LP’s, chinese klon clones, and behringer pedals through a hot rod deluxe amp. My most expensive piece of music gear isn’t even worth a grand, and if I liquidated everything I have (including my band’s PA system), it still wouldn’t come close to half the price of one of those guitars.

My stable of Taylors...a 110E I paid $600 for and a 2008 Taylor Custom Sinker Redwood GS. They both play great but the higher end GS is very smooth music machine!

Definitely, I feel like a Martin D series is the top of my playing abilities though

I will say though that I was not very impressed with these Taylors, they looked great but didn't really offer anything tonally that a $2k Taylor doesn't IMO.
If I was spending that kind of money, I'm getting a Huss & Dalton or one of the ones you mentioned.
Just my opinion though, everyone has one.

If I have $8k sitting around, I have a lot more pressing needs than a guitar to dedicate those funds to. Probably spend $500 on an acoustic guitar and another $7,500 on home improvements.

I just bought a used Martin GPC16E with Koa back and sides. I kind of wish I'd have waited until I found a rosewood, but I'm overall really happy with it. I looked at Taylors 214ce and even the DLX you can get for a good price used. However, IMHO, the Martin sounded way better acoustically.
I need to make an appt with herr FretShack for a setup, we've got some buzzing going on and I've adjusted the truss rod all I'm comfortable doing on a $1500 guitar.

You should go to every music store that you can and figure out what you like best.
As for values, I recently acquired an Eastman and was blown away.

When I was looking for my first acoustic in the $300 range I went to the store and played a few in that price range and as soon as I played the Ibanez... I knew it was the one.
I also learned at that time that if I ever got in the $600-800 range I wanted a Taylor which eventually led me to the 110e.
fwiw ...I lucked into the Custom GS as I bought it off an old lady that needed cash to fix her AC!!

I do this very thing with a Taylor 214ce. Great workhorse guitar new for 1k.
