Honestly, I would recommend starting with their first record, and just going through them in chronological order. It's interesting to see how the sound evolved.
But if you don't want to do that, then just make sure you listen to Being There, Summerteeth, and YHF. Oh, and A Ghost is Born.

The 'Kicking Television' live in Chicago album is not a bad starting point.

I think Being There is their best record...
I'd start with AM and follow their progression... Its not a great record, but its a fun one...
Only Stirratt and Tweedy remain from those days though..

great band.
my personal favorite is Sky Blue Sky. IMO a masterpiece and a great place to start.
Yankee Hotel Foxtrot is the consensus' greatest, but IMO not the best place to start.
Being There and Ghost is Born are also great.
Kicking Television is live and is representative of their live sound. They are one of the best live bands out there.
Honestly can't go wrong.

One of the absolute best bands of the era imho. Yankee Hotel Foxtrot is great, but to me Sky Blue Sky is more accessible. Impossible Germany is probably my favorite song of theirs. A ghost is born is also great.
However, note that their later stuff is pretty bad.

My favorite album is A Ghost is Born but that isn't one you jump into.
But like some mentioned, start from the beginning and read up on each one to see how they progressed. After the split from Jay Bennett, it was like a new band IMO and not for better nor worse.

"Being There". Then go backwards into Uncle Tupelo. Wilco evolved musically like Radiohead and the Beatles. You can't comprehend who they are now without knowing where they came from.

Love all their albums, have since the start. Was an Uncle Tupelo fan, Son Volt, etc..
It's a wasted month without hearing Hummingbird(W), Theologians(W), Gun(UT), Drown(SV), California Stars(W + Billy Bragg),etc..cranked full blast.
