Playing tone is in the hands and is very subjective
I finally got around to watching Vince Gill playing at the George Jones memorial. If you get past the emotion of it and the fact the he is crying while trying to play and sing you get to the solo. He is just fingerpicking a Martin. I do not know how you make it sound that smooth. I'm sure the Martin he was playing was six figures and pre-war, but still. How does it sound so smooth and soft?
Gilmour was mentioned. I'll second him.
Also more random. Billy Duffy's sound on The Cults "Love Removal Machine". Mellow but still raunchy, and I am sure with a semi hollow electric.

Fender Twin with a lot of reverb. Tele turned to bridge PU only, while picking up against the bridge for maximum twang. Tune down a half/whole step to allow for some major bending.

He's a living "tone" encyclopedia. He studied folks he wants to emulate or capture certain sounds and he knows how the player held his hands differently/fretting style, anything unique about the gear set up and all that. Just brilliant in his own way.

James Honeyman-Scott on the Pretenders debut album.
Love his playing style, and Chris Thomas' production on that record was perfect.

My favorite is Kurt Cobain. To me his guitar tone is the definition of what grunge should sound like.
While I never cared for the material, Cobain did have a pretty unique guitar sound/tone. A nice mixture of clean with a dash of nasty thrown in.
My personal favorites would be Gilmour and Prince.

Jeff Beck is the ultimate guitar hero and Yoda. Dude still rocks a lead at 72, just otherworldly.

Pretty much this, except without the years specified to show off. Well maybe with the exception of Santana because he did shift appreciably. Also toss in the caveat that while Anastastio's tone was very good, he abused it by noodling more than a Chef Boyardee plant.

I'll always love the grunge sound because it was in fullest bloom during my most impressionable years, so I have to go with Jerry Cantrell's Alice in Chains sound and Billy Corgan's Smashing Pumpkins sound, however multi-overdubbed it may be.

Gilmour's slightly dirtied up acoustic, on Wish You Were Here. He mixed a 12 string and acoustic together I think,or he might have taken 2 or 3 strings off of the 12 string? I have been meaning to find out about that.
John Fogerty on Run Through The Jungle.
Mark Knopfler on Brothers At Arms and Iron Hand.
Al Green,on all of his stuff.
Man, this list could go forever....

Hell yes. I've always been fascinated by that tinny tone on "The Wait". That's a hard one to duplicate.
Speaking of leaving people out, I guess EVHs "brown sound" is just taken for granted at this point. The guitar sound on that first VH album is pretty amazing.
