Sebadoh, two guys from Dinosaur Jr that couldn't get their songs past J. Mascis so they formed a side band until Barlow got kicked out of Dinosaur Jr. in '89 but Sebadoh continued:

Hindu Love Gods. Basically a 1990 drunken jam session with Warren Zevon and REM. Mostly playing old blues songs, but also a pretty good version of Raspberry Beret. Not exactly obscure, but never had much exposure either. I dig it.

Brian Eno is the king of obscure side projects. Right now he has a documentary about himself that uses generative AI to create riffs on interviews he has done so with every watch of the documentary, it will be different.
