INXS is probably my answer.
I knew a few songs. I was there for the opening band.
Holy shite! They killed it. Walked out a big fan

Anytime you can see Vince Gill it's a treat.

Marilyn Manson. Wasn’t the biggest fan, but went to see them and they were awesome live. The music sounded great and the stage theatrics were great as well. All around awesome show and The Union Underground opened for them and were also good. This was back around 2000. Time flies.

Recently saw LR and Earth Wind and Fire
Was very impressed with EW&F, A+.
LR was fair, I offer a "C" performance.

The Rolling Stones a few years ago in NOLA. I had never seen the Stones before--and would kill to travel back in time to see them in the 70s--and it was more a bucket list type thing for me. I thought it might be a bit mediocre, even sad given how old those dudes are... But dammit if they didn't still put on a good show. Jagger was high energy and never stopped moving, sounded great and they played most of their best songs. I went with friends who had free tickets in a fully catered box with open bar, so that probably helped with my opinion of everything. But I was really glad I went. Much better than I expected.
Biggest surprise of that show was seeing Keith Richards do a couple songs and sing. For a guy who looks like shite, has lived very hard for decades and chain smokes, his singing voice was really good. I was shocked.
And I saw Cheap Trick for the first time, last year about this time. Same scenario... been a fan since I was a little kid and never saw them. I just wanted to at least see them play once. I was bummed that Bun E. Carlos wasn't on drums but Rick Nielson's son was. Zander's kid played rhthm guitar and sang. HOLY shite they were amazing. MUCH MUCH MUCH better than I thought they'd be. The best old school classic rock band I have seen play in their later years.

A few random ones over the years:
Johnny Winters at Jazz Fest
Cage the Elephant in 2009 at The Varsity
Morris Day & the Time at Laberge
My Morning Jacket at the Orpheum in New Orleans (they were a surprise opener on an after jazz fest show)
Ed Sheeran at the Superdome
Night Ranger at Rockin the Bayou
Eric Clapton at the smoothie king center
Kiss at the Cajundome
Save Face ar Riot Fest (I had never heard of them, and they were absolutely incredible).
Sleeping With Sirens ar So What?
Taking Back Sunday at the Fillmore this year
Slaughter at Stergis completely melted my face off. Never saw it coming.
