I saw the Lost Bayou Ramblers once because I was friends with one of them. They were ok.

Fairport Convention - "Si tu dois partir"
This English band translated Dylan's "If You Gotta Go, Go Now" into French because, they claimed, their arrangement sounded "Cajun" to them
It's a great record, but it doesn't really sound Cajun to me

Harry Choates - "Jole Blon" (1946)

I guess they would qualify as a cajun band...but Voice of the Wetlands All-Stars were great at Jazz Fest this year.

This record apparently got some radio airplay around the country in 1971. It's interesting as an attempt to merge hippie country-rock with Cajun:
