Feufollet - Au Fond du Lac, though I think they have a different singer now. Or she died her hair blond. IMO, this version is a lot better than the album version.

Most of the bands listed are Zydeco. Zydeco and Cajun are different.

Wayne Toups basically revived a dying genre and has adapted with it. His songs are probably split between electrified covers of all the classics and original content. He is, in my opinion, the best performer in the genre of Cajun/zydeco ( about as true a hybrid as you will find).
I like DL Menard. Blackie Forestier and the Cajun Aces were good- Blackie used to live across the street from me. I remember listening to him play outside in the afternoons/evenings when I was growing up. I had no idea he was borderline famous.
Michael Doucet is rather widely regarded as well.
For newer stuff, I like Danny Colette, but I think he's a little more 'swamp pop' than he is Cajun- not really sure what kind of stuff you're looking for. L'Angelus has attempted to turn traditional Cajun music into a slightly poppier, more polished version of what it has been. I'm split on them, but I generally enjoy their sound.
You can look around and find tons of traditional Cajun cover bands around at present, if you're looking for someone to listen to live.

I always thought "Diggy Liggy Lo" was an old Cajun folk song but according to its Wiki page it was written by the (in)famous Jay Miller of Crowley.

Well, cher, it is from Crowley. My guess is he possibly adapted it from an old Cajun folk song or was at least highly influenced.
